Harvested from a hybrid variety of the European Acipenser Baerii, this Beluga Siberian caviar originates from a unique breed of sturgeon. By cross-breeding Beluga (also known as Huso Huso) and Siberian sturgeon, the resulting caviar offers all the distinctive flavor of a true Beluga caviar while also protecting this threatened population of sturgeons.
Beluga Siberian caviar ranges in color from grey-green to deep black, with medium-to-large pearls. The rich, full flavor of this caviar mimics that of Beluga, but with greater hints of earthiness and some nutty notes owing to the contributions of the Siberian sturgeon.
Khavyar’s Beluga Siberian caviar is sourced from Italy, where sustainable farming practices ensure that the prized lineage of the Beluga can continue to be enjoyed without impacting this critically endangered species in the wild. Though environmental concerns have limited the importation of true Beluga caviar to the United States, this hybrid offers a responsible way to indulge in the greatly sought-after flavors of Beluga.
Because of its similarity in flavor to a true Beluga, this Beluga-Siberian hybrid caviar should be served simply to best showcase the entire flavor profile of this unique breed. Serve Beluga Siberian caviar direct from the chilled tin, or on crackers. This variety pairs nicely with sparkling Rosé (perfect for warmer weather), as well as a fine Chardonnay— of course, Champagne and vodka are still the most traditional accompaniments.
